Making use of canned black beans makes these Easy Cuban-Style Black Beans quick and easy enough to prepare any night of the week. The traditional flavors are there in a dish that is ready in under 30 minutes!

INGREDIENTS

  • 1/4 cup olive oil
  • 1 cup diced white or yellow onion
  • 1 small green bell pepper seeded and diced
  • 1 jalapeno seeded and diced
  • 1 teaspoon minced garlic
  • 3 15 ounce cans black beans, drained
  • 3/4 cup low-sodium chicken or vegetable broth
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • fresh ground black pepper to taste
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon sugar

INSTRUCTIONS

  1. Heat oil in heavy 12" skillet over MEDIUM heat. Add onion, bell pepper, jalapeno, and garlic and cook, stirring, until vegetables begin to soften, approximately 5 to 6 minutes. Add the beans, broth, oregano, cumin, salt, pepper, vinegar, and sugar and simmer until mixture thickens and flavors blend, stirring occasionally, about 15 minutes.
